Ingredients
For the onion bites:
- 2 large sweet onions (Vidalia or yellow)
- 1½ cups (190g) all-purpose flour
- 1 Tbsp paprika (smoked or sweet)
- 2 tsp garlic powder
- 2 tsp onion powder
- 1½ tsp kosher salt
- 1 tsp black pepper
- 1 tsp cayenne pepper (optional, for heat)
- 1 tsp dried oregano or Italian seasoning
- 3 large eggs
- 2 cups (200g) panko breadcrumbs
- Cooking spray (olive or avocado oil)
For the Blooming Sauce (copycat):
- ½ cup (120g) mayonnaise
- 2 Tbsp creamy horseradish sauce
- 1 Tbsp ketchup
- ½ tsp paprika
- ¼ tsp cayenne (optional)
- ¼ tsp garlic powder
- Salt & black pepper to taste

Instructions
- Preheat oven to 425°F (220°C) OR preheat air-fryer to 400°F (200°C).
- Peel onions and cut off the top (not root end). Slice each onion into 8–12 wedges, cutting ¾ of the way down (keep root intact so petals stay connected). Gently separate the “petals.”
- Set up 3 bowls:
- Bowl 1: flour + all spices (paprika, garlic powder, onion powder, salt, pepper, cayenne, oregano)
- Bowl 2: beaten eggs
- Bowl 3: panko breadcrumbs
- Coat each onion wedge: flour mixture → egg → panko. Shake off excess at each step. Really press panko into all the crevices for max crunch!
- Place coated bites on a wire rack over a baking sheet (or directly in air-fryer basket). Spray generously with cooking spray.
- Bake 18–22 minutes or air-fry 12–15 minutes, flipping halfway and re-spraying, until deep golden and crispy.
- While baking, mix all Blooming Sauce ingredients in a small bowl. Taste and adjust seasoning.
- Serve immediately with the sauce in the center for dipping!
